Day 2: THE SECRETS OF THE FARM-THE BUFFALO MOZZARELLA with TASTING, LUNCH AT LAKE TRASIMENO, CITTÀ DELLA PIEVE GUIDED TOUR

Stop At: Lake Trasimeno Regional Park, Province of Perugia, Italy
We visit the only farm in Umbria specialized in breeding and processing of buffalo milk. The characteristics of the Umbrian pastures combined with the centenary experience in the transformation of the milk produced in the company, give a unique taste and flavour to the most renowned dairy product of our country: the mozzarella! Surrounded by the green Umbrian hills, in direct contact with the animals, we discover the secrets of the processing of buffalo milk - between ancient techniques, handed down from father to son, and modern technologies - up to the finished product: mozzarella, ricotta, scamorza, caciotta and many other delicacies. At the end a delicious tasting.

Our day continues with a pleasant scenic stop on the shores of Lake Trasimeno, the largest in Central Italy, beautiful body of water, surrounded by natural landscapes of great beauty, ancient villages and historic houses. Lunch at a local restaurant.

Day 3: ORVIETO GUIDED TOUR, WINE TOUR with LUNCH, TODI GUIDED TOUR

In the early afternoon we’ll reach Todi, "The most livable city in the world" or "The ideal city", to admire its treasures: Cisterne Romane, Church of San Fortunato which preserves in the crypt the tomb of Jacopone Da Todi, Tempio Della Consolazione by Bramante, Cathedral of the twelfth century built on the ruins of the ancient temple to the god Apollo, ceramists’ workshops, and more.

We’ll take a stroll around its fascinating alleys, admiring the most remarkable sites of the city: Basilica di San Francesco, Chiesa di Santa Chiara, Piazza del Comune, Cattedrale di San Rufino, Chiesa di San Damiano.

Nothing makes us so famous in the world such as pasta! And nothing can make us feel like home while we are far away as a forkful of this dish, so simple and yet so tasty! But do we really know its secrets and regional specialties? In a lovely farmhouse among the olive trees, we will learn the biological phases of the product from the grain to the grind, learn to recognize the various types of flour, the flour processing techniques, the seasons and their crops, and experience the flour processing into typical Umbrian pasta. At the end of the class, we’ll enjoy a delicious plate of pasta and some local delicacies!

We’ll spend the afternoon in Gubbio, one of the oldest Umbrian cities. Here you can breathe history from every stone and many are the traces of its glorious past: the Roman Theater, the Basilica of Sant'Ubaldo, the Gothic cathedral and the Church of Santa Maria Nuova
